
Watermelon, Feta & Lentil Summer Salad
I accidentally made up this recipe one day, it started as a bit of a random end of the week fridge raid, watermelon because it’s hot out, feta because it was going out of date, red onion for a bit of a kick and colour, and then lentils because… well, I wanted some protein!
The result was both nutritious and delicious and it has since become a light lunch-time staple for me throughout the summer months!
We’ve got:
- Hydration from the watermelon
- Protein + fibre from lentils (great for blood sugar regulation)
- Calcium from feta (important for hormones, especially if you’re post-pill or in perimenopause)
- Sulfur compounds from red onion (supporting liver detoxification)
- And fresh mint that makes you feel like you are on a Greek Island!
Ingredients (serves 2):
- 200g finely chopped watermelon
- 250g lentils (I often use a pre-cooked packet of ‘merchant gourmet puy lentils’)
- ½ small red onion, thinly sliced
- 60g crumbled feta
- A handful of fresh mint, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- Sea salt & black pepper, to taste
Method:
- Add your cubed watermelon to a large mixing bowl.
- Toss in the lentils, feta, red onion and mint.
- In a small bowl, whisk together the olive oil and vinegar. Season well.
- Pour over the salad and gently mix.
- Enjoy!
