Watermelon, Feta & Lentil Summer Salad

I accidentally made up this recipe one day, it started as a bit of a random end of the week fridge raid, watermelon because it’s hot out, feta because it was going out of date, red onion for a bit of a kick and colour, and then lentils because… well, I wanted some protein!

The result was both nutritious and delicious and it has since become a light lunch-time staple for me throughout the summer months!

We’ve got:

  • Hydration from the watermelon
  • Protein + fibre from lentils (great for blood sugar regulation)
  • Calcium from feta (important for hormones, especially if you’re post-pill or in perimenopause)
  • Sulfur compounds from red onion (supporting liver detoxification)
  • And fresh mint that makes you feel like you are on a Greek Island!

Ingredients (serves 2):

  • 200g finely chopped watermelon
  • 250g lentils (I often use a pre-cooked packet of ‘merchant gourmet puy lentils’)
  • ½ small red onion, thinly sliced
  • 60g crumbled feta
  • A handful of fresh mint, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • Sea salt & black pepper, to taste

Method:

  1. Add your cubed watermelon to a large mixing bowl.
  2. Toss in the lentils, feta, red onion and mint.
  3. In a small bowl, whisk together the olive oil and vinegar. Season well.
  4. Pour over the salad and gently mix.
  5. Enjoy!

I hope you enjoy making this salad. Nutrition doesn’t have to be complicated, sometimes it’s just about learning to pair the right ingredients in a way that supports your body. If you’d like more personalised support, I’d love to help you find what works best for your unique body.
