
Cacao & Date Energy Balls
I make these at least once per week, without fail. My whole family loves them. In fact, every year, my Dad asks me to make him a big batch for his birthday!
These are the kinds of snacks I always have in the fridge! These cacao-date bites are rich, chewy, naturally sweet and totally customisable depending on your cupboard contents.
They’re perfect for:
- Pre or post-gym fuel
- That 3pm blood sugar wobble
- PMS cravings!
My favourite part about this recipe is how easy they are to make. You simply throw everything into a food processor, roll some balls, and you’re done. No baking. No mess. No excuses!
Ingredients (makes 10- 12 balls):
- 10 large Medjool dates (pitted, soak in hot water for 10 mins)
- 1 cup oats
- 2 tbsp nut butter (peanut, almond or cashew)
- 2 tbsp raw cacao powder
- ½ cup chia seeds
- ½ cup pumpkin or sunflower seeds
- ½ cup coconut flakes
- 2 tsp melted coconut oil
- Optional: a sprinkle of cinnamon
- Tip: You might need a few dashes of water to make the mixture hold, it shouldn’t be too sticky but should hold its shape when rolled into a ball.
Method:
- Pit the dates and soak them in boiling water for 10 minutes.
- Add all dry ingredients into the food processor and blend.
- Add in the wet ingredients and dates and blitz again until smooth (ish!)
- Roll into balls and pop in the fridge for a couple of hours before serving!
