Roast Chicken Soup Recipe

This is my gorgeous roast chicken soup, this recipe is on repeat in my house over the winter months and is always the first meal I gravitate towards if I feel a cold coming on. This dish is protein-rich, high in fibre and vitamins and is utterly delicious.

 

Ingredients

  • 1 bunch of celery
  • 4 large carrots
  • 2 courgettes
  • 2 leeks
  • 1 large onion
  • 200g spinach
  • 5 cloves garlic
  • 1 thumb ginger
  • 1 packet chicken broth
  • Handful of coriander
  • 3 sweet potatoes
  • 1 jar of cannellini beans

 

Method

  1. Simply roast the chicken in the oven.
  2. Whilst the chicken is cooking, chop all of the ingredients (apart from the spinach and coriander) and fry off in a large pan with some butter.
  3. After 15-20 minutes, add the broth and extra water and simmer for 40 minutes.
  4. Once the chicken is cooked, shred it and add to the soup with the spinach, coriander and beans).
  5. Season with salt and pepper and enjoy!
