
Roast Chicken Soup Recipe
This is my gorgeous roast chicken soup, this recipe is on repeat in my house over the winter months and is always the first meal I gravitate towards if I feel a cold coming on. This dish is protein-rich, high in fibre and vitamins and is utterly delicious.
Ingredients
- 1 bunch of celery
- 4 large carrots
- 2 courgettes
- 2 leeks
- 1 large onion
- 200g spinach
- 5 cloves garlic
- 1 thumb ginger
- 1 packet chicken broth
- Handful of coriander
- 3 sweet potatoes
- 1 jar of cannellini beans
Method
- Simply roast the chicken in the oven.
- Whilst the chicken is cooking, chop all of the ingredients (apart from the spinach and coriander) and fry off in a large pan with some butter.
- After 15-20 minutes, add the broth and extra water and simmer for 40 minutes.
- Once the chicken is cooked, shred it and add to the soup with the spinach, coriander and beans).
- Season with salt and pepper and enjoy!
