Gluten + Dairy-Free Banana Bread

I keep waiting for my family to get bored of this recipe but they keep asking for more! I love that this recipe is free from two common food intolerances/allergies but is still delicious.

I end up making this most weeks and keeping it in the cupboard for when those sweet cravings hit! Once cooked it will last for 5 days.

 

Ingredients (Serves 9)

  • 3 ripe bananas, well mashed
  • 3 large eggs
  • 60g honey
  • 2 tbsp extra virgin olive oil
  • 200g almond flour
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 40g dark chocolate

 

Method

  1. Mash the bananas in a bowl until smooth (a few small lumps are ok)
  2. Add in the eggs, honey and olive oil and mix until combined.
  3. Add in all dry ingredients apart from the chocolate and stir well.
  4. Once all combined, mix through the chocolate chunks/chips.
  5. Pour into a lined loaf tine. Cook in your preheated oven (170 fan) for 40-50 minutes (this varies depending on your oven!) You want the knife to come out almost clean but a bit sticky.
