
Cottage Cheese Pancakes
Many of the clients that I work with have children and I found a common request was for quick, fun (but healthy) weekend breakfast ideas for all the family. So I started experimenting and came up with these very easy and delicious high protein pancakes.
These take under 5 minutes to make and contain around 20g of protein per serving. They also make a great afternoon snack.
Ingredients
- 100g cottage cheese
- 1 large egg
- 2 tbsp plain flour
- 1 tsp baking powder
Method
- Add the cottage cheese and egg to a bowl and whisk together with a fork (there will still be some small lumps!)
- Stir in the flour and baking powder.
- Heat some butter or coconut oil in a pan and pour in your mixture (makes about 3 small-medium pancakes). This is 1 serving.
- Cook for about 2-3 minutes on each side until lightly golden.
- You could serve them with fresh berries, a small drizzle of honey or a dash of marmite (my husband’s favourite!)
